Vegan Mexican Street Corn

Ingredients

  • 1 tablespoon vegan mayo
  • 1/3 teaspoon chipotle chili seasoning
  • 1/4 teaspoon chili lime seasoning I use Trader Joe's chili lime seasoning. If you do not have this, use taco seasoning and 1/2 teaspoon of lime juice
  • 1/2 teaspoon water
  • 2 corn on the cob

Instructions

  • Grill the corn on a stovetop or grill.
  • Mix the rest of the ingredients together to create a sauce.
  • Add this sauce to your corn.
  • Serve with chopped cilantro or lime/lemon wedges. If you like it spicy add some crushed red pepper or cayenne pepper on top.
