Vegan Mexican Street Corn
Sweet corn topped with a delicious, tangy, creamy chipotle vegan sauce

- 1 tablespoon vegan mayo
- 1/3 teaspoon chipotle chili seasoning
- 1/4 teaspoon chili lime seasoning I use Trader Joe's chili lime seasoning. If you do not have this, use taco seasoning and 1/2 teaspoon of lime juice
- 1/2 teaspoon water
- 2 corn on the cob
Grill the corn on a stovetop or grill.
Mix the rest of the ingredients together to create a sauce.
Add this sauce to your corn.
Serve with chopped cilantro or lime/lemon wedges. If you like it spicy add some crushed red pepper or cayenne pepper on top.
