Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup finely diced veggies
  • 3/4 cup black beans
  • 2 tsp taco seasoning
  • 1 tsp smoked paprika
  • 2 tsp chipotle chili seasoning
  • 1 tsp cayenne pepper
  • 1 tsp cumin
  • 1/4 cup chopped cilantro
  • 2 tsp lemon juice
  • salt to taste
  • homemade or store bought salsa
  • 1 tbsp olive oil

Instructions

  • Warm up olive oil in a non-stick pan
  • Once oil heats up, add veggies, beans, and quinoa.
  • Add in all the spices.
  • Cook for a few minutes until veggies are soft. Make sure to stir.
  • Turn off heat. Squeeze in lemon juice. Fold in chopped cilantro (if you like it)
  • Top it with homemade salsa or guacamole.
