Ingredients

cooked quinoa

finely diced veggies

black beans

taco seasoning

smoked paprika

chipotle chili seasoning

cayenne pepper

cumin

chopped cilantro

tsp
lemon juice
salt to taste
homemade or store bought salsa

olive oil
Instructions
Warm up olive oil in a non-stick pan
Once oil heats up, add veggies, beans, and quinoa.
Add in all the spices.
Cook for a few minutes until veggies are soft. Make sure to stir.
Turn off heat. Squeeze in lemon juice. Fold in chopped cilantro (if you like it)
Top it with homemade salsa or guacamole.
