Grilled Fennel Salad

easy, nourishing salad

Ingredients

  • 1/2 cup chopped fennel
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • juice from 1 lemon
  • 1/2 cup thinly sliced watermelon radish
  • 1/4 cup finely chopped parsley
  • 1.5 tbsp olive oil

Instructions

  • Add 1/2 tbsp of olive oil in a pan
  • Add fennel to the pan.
  • Add in salt and pepper.
  • Let the fennel cook until it become charred.
  • Add in 1/2 of the lemon juice and mix with the fennel. Remove from pan.
  • Mix the remainder of olive oil with remainder of the lemon juice. Add in some salt and pepper. This is your simple lemon dressing.
  • Mix all the ingredients together and stir in the dressing.
  • Say a prayer of gratitude and enjoy.
