Gluten Free Pasta

easy, vegan grain free pasta

Ingredients

  • 1 bunch King Soba Noodle Culture sweet potato and buckwheat noodles The entire packet comes with 3 bunches, but I only used 1 for this recipe
  • 2 cups chopped veggies
  • 2 tbsp olive oil
  • 1 cup canned crushed tomatoes
  • 1/2 tsp cumin seeds
  • 1 tsp Italian seasoning I also like Fody's lemon herb seasoning instead.
  • 1/2 tsp cumin powder
  • 1.5 tsp salt adjust based on your taste
  • 1/2 tsp crushed red pepper
  • 1/2 tsp black pepper

Instructions

  • Boil water with a pinch of salt and a 1 tsp of olive oil.
  • Add noodles and let it cook on medium heat for 5-6 mins.
  • Drain water once noodles are cooked and add 1 tsp of olive oil to prevent the noodles from sticking to each other.
  • To a non-stick pan, add 1 tbsp of olive oil.
  • Once oil warms up, add in cumin seeds.
  • Add the crushed tomatoes and let it cook for 1-2 mins.
  • Add in veggies and all the spices. Let the veggies cooks for a few mins.
  • Add in noodles once veggies are cooked.
  • Mix in rest of the olive oil before serving.
  • Top it with crushed red pepper.
  • Say a prayer of gratitude and enjoy.
