Boil water with a pinch of salt and a 1 tsp of olive oil.
Add noodles and let it cook on medium heat for 5-6 mins.
Drain water once noodles are cooked and add 1 tsp of olive oil to prevent the noodles from sticking to each other.
To a non-stick pan, add 1 tbsp of olive oil.
Once oil warms up, add in cumin seeds.
Add the crushed tomatoes and let it cook for 1-2 mins.
Add in veggies and all the spices. Let the veggies cooks for a few mins.
Add in noodles once veggies are cooked.
Mix in rest of the olive oil before serving.
Top it with crushed red pepper.
