Tex mex pasta

I love pasta. I also love Mexican food. When you mix both together, what do you get??? Tex-mex pasta and it is delicious.. It is a fusion of flavors bursting in your mouth and just taste wonderful. It is super to easy to make and healthy too, depending on the pasta that you use. Also, it hits the spot when you are craving something tasty, but don’t want to spend hours in the kitchen.

I love experimenting and creating new recipes. The kitchen is my favorite place to be. I love mixing different types of cuisines and seeing if it works together. You can also add fake meat into this pasta as well if you are want. There are so many possibilities and combinations, similar to life.

In life, there are so many avenues to go and it depends on what you choose. Sometimes there are different options presented to you and it is hard to figure out which way to go, but sometimes, you do have the possibility of picking both and modifying your choices. It is like having your cake and eating it too. Anyways, hope you like this fusion of flavors. =)

Tex Mex Pasta

Ingredients

  • 2.5 cups diced veggies I like to use corn, bell pepper, and zucchini
  • 1 cup cooked black beans
  • 1.5 cups cooked pasta
  • 1 cup pasta sauce I like the Prego sensitive sauce. If you are using plain sauce from a can, then it will have to be flavored/seasoned.
  • 1/2 cup water
  • 2 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp smoked paprika
  • 1/2 tsp taco seasoning
  • 1/2 tsp chipotle chili seasoning
  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder
  • 1/4 tsp hing or asafetida
  • 1/4 cup cheddar cheese can substitute with vegan cheese as well

Instructions

  • Warm oil on a pan.
  • Add in the cumin seeds.
  • Once the cumin seeds began popping, add in the chopped veggies, cooked black beans, and pasta sauce.
  • Add in all the spices listed above. Stir and let veggies cook under almost tender.
  • Add in the cooked pasta.
  • Add in the water (adjust based on how thick you want the sauce).
  • Add in the shredded cheese.
  • Say a prayer of gratitude and enjoy!
