Tangy Karela (bitter melon or bitter gourd)
I love karela. I know many people are not a fan of this vegetable. If you are not a fan, I don’t blame you because I used to dislike karela too. However, a few years ago I had thinly sliced karela at the temple and it was amazing. I was surprised that I liked the flavor and taste. It was crispy and flavorful. After that experience, I started becoming open to eating karela. I’ve been having this tangy karela for breakfast every day for the past month! This year we had a lot of karela growing in the backyard so it has been a great addition to my morning routine. This literally takes 5 minutes to make and I swear it will make you think differently about karela.
Bitter melon or bitter gourd has many health benefits. It is a rich source of antioxidants and may lower blood sugar levels. It may aid in weight loss and help boost your immune system. I love eating 1 per day and I use this recipe.
Tangy Karela (bitter melon or bitter gourd)
Ingredients
- 1 cup very thinly sliced karela (bitter melon or bitter gourd)
- 1/2 tbsp olive oil
- 1/4 tsp chili lime seasoning I love the Trader Joe's brand
Instructions
- Slice the karela (bitter melon or bitter gourd) into very thin slices. Remove the seeds and the white flesh from the inside.
- Heat olive oil in a pan.
- Add karela and stir.
- Add the chili lime seasoning.
- Let the karela cook for around 5 minutes, stirring occasionally until they are slightly cooked and slightly charred.
