Kale Pasta Salad
Pasta salad reminds me of picnics and BBQs. I feel like it is has been so long since I’ve been to either a picnic or a BBQ and miss those carefree summer days. This pasta salad is a reminder that summer is just around the corner!
I’ve been trying to incorporate more veggies into my diet and salads are a great side dish to make with dinner. This pasta salad is even filling enough to eat for lunch on its own as well. To add more protein to the salad, you can easily incorporate chickpeas, tofu, nuts, or even change up the pasta to chickpea pasta.
The star of the pasta salad is the amazing vegan dressing, which is tangy and creamy. It’s so delicious. I literally had this salad for a few meals this week and I am still not bored. You can play around with the veggies and add your favorite ones.
This is also a simple dish that you can make in advance and prepare the day of the event. You can chop all the veggies and boil the pasta the day before. You can even make the dressing the day before. On the day of the event, just sauté the kale and mix together all the ingredients. It is so easy to make and everyone will be helping themselves to seconds. If you family/friends do not like kale, you can easily remove it and replace it with any veggies of your choice. Cucumbers, tomatoes, and olives work well in this recipe.
Kale Pasta Salad
Ingredients
- 1.5 cups chopped kale
- 1 cup diced veggies
- 1 tbsp finely chopped parsley
- 1 tbsp finely chopped mint
- 1 cup cooked pasta
- 1 tbsp olive oil
- 1 tsp zaatar seasoning if you don't have this substitute with Italian seasoning
- 1 tsp paprika
- 1/4 tsp salt to taste
Dressing
- 2 tbsp vegan mayo
- 1/2 tbsp dijon mustard
- 2 tsp lemon juice
- 1/2 tsp black pepper
Instructions
- Warm up olive oil in a non-stick pan.
- Add in kale and any other veggies that u prefer to be cooked.
- Add zaatar seasoning and paprika.
- Stir and cook until kale gets soft.
- Remove from heat and set aside.
- Make the dressing by mixing mayo, mustard, lemon juice, and black pepper.
- Mix pasta together with parsley, mint, any other veggies, and cooked kale mixture.
- Add the dressing and mix well.
- Say a prayer of gratitude and enjoy.
