Gluten Free Pasta
I love pasta. But it is heavy on the carbs and not the healthiest. Therefore, I love trying out different types of pasta. I love chickpea pasta and red lentil pasta, which adds extra protein to the pasta. This one is grain free/gluten free and from King Soba and I bought it from amazon. I usually buy the 6 packet so I always have in stock.
This is great to have on ekadashi because it is so tasty and literally my-go meal every 2 weeks. I also have a recipe for Grain Free Glass Noodles as well, which are ekadashi friendly as well, so make sure to check that out.
So what exactly is ekadashi and what is the purpose? This a great article if you want to read more about Ekadashi, but I will try to explain the importance to me below.
Ekadasi is a Sanskrit word for number 11. The word literally means the 11th day of each half of the month in the Vedic lunar calendar. So there are two Ekadasis in each month on the Vedic calendar. Fasting gives us an opportunity to minimize our bodily demands, such as eating or preparing extravagant meals, so we can have more time to focus on our relationship with God.
During the fast, grains (wheat, rice, etc.), legumes, lentils, peas, mustard seeds or oil, sesame seeds, and soy are avoided. We often spend so much time doing other things in life, but many times we tend to neglect or overlook this eternal, important, special relationship with have with the Divine. During this day, I like to focus on meditation, reading spiritual books, chanting the holy names of the Lord, and really showing my gratitude and appreciation to God in different ways, such as offering beautiful flower garlands or hearing about His past times. It is also a time for internal reflection and retrospective. I try to think of the qualities that I have that require some work and try to figure out how I improve those qualities. That’s my favorite part of spiritual life. It is always about self-improvement and being the best version of yourself.

Gluten Free Pasta
Ingredients
- 1 bunch King Soba Noodle Culture sweet potato and buckwheat noodles The entire packet comes with 3 bunches, but I only used 1 for this recipe
- 2 cups chopped veggies
- 2 tbsp olive oil
- 1 cup canned crushed tomatoes
- 1/2 tsp cumin seeds
- 1 tsp Italian seasoning I also like Fody's lemon herb seasoning instead.
- 1/2 tsp cumin powder
- 1.5 tsp salt adjust based on your taste
- 1/2 tsp crushed red pepper
- 1/2 tsp black pepper
Instructions
- Boil water with a pinch of salt and a 1 tsp of olive oil.
- Add noodles and let it cook on medium heat for 5-6 mins.
- Drain water once noodles are cooked and add 1 tsp of olive oil to prevent the noodles from sticking to each other.
- To a non-stick pan, add 1 tbsp of olive oil.
- Once oil warms up, add in cumin seeds.
- Add the crushed tomatoes and let it cook for 1-2 mins.
- Add in veggies and all the spices. Let the veggies cooks for a few mins.
- Add in noodles once veggies are cooked.
- Mix in rest of the olive oil before serving.
- Top it with crushed red pepper.
- Say a prayer of gratitude and enjoy.
