I love making my own compote/jams. It is so easy to make and also taste so fresh and wonderful. Oatmeal is my go-to breakfast and there are so many ways to make oatmeal. I love to add either fresh fruit, compote, nuts, and seeds to my oatmeal for an extra special taste. Nothing beats a warm bowl of oatmeal for breakfast with some nice masala tea!

Blueberry Compote

Homemade blueberry compote that you can use to top anything to jazz it up, such as oatmeal, waffles, pancakes, cookies, cake, or yogurt

Ingredients

  • 1/4 cup water
  • 1/4 cup brown sugar or coconut sugar
  • 1 cup blueberries
  • 1-2 tsp lemon juice
  • 1 tablespoons arrowroot starch (mix this with 2 tablespoons water) you can substitute with corn starch if you don't have arrowroot starch

Instructions

  • Boil the water
  • Add brown sugar to water until it forms a sticky syrup
  • Add in blueberries and vanilla
  • Continue warming mixture until blueberries start exploding
  • Add in lemon juice
  • Lower heat
  • Mix arrowroot starch (or corn starch) with 2 tablespoons of water and add this to the mixture. This will thicken the mixture.
  • Turn off heat and there you go! Now you have fresh compote that you can add on to of pancakes, waffles, oatmeal, bread, etc.
