Easy, Tasty Avocado Toast

Can you believe that the first time I ate an actual avocado was in my early 20s? My parents never bought avocados growing up, so I just was not exposed to them. In college, I had avocados in guacamole or vegetarian sushi, but I never purchased avocados on my own, or ate them alone. Man, I was totally missing out.

Now, I love avocados. They are such a wonderful superfood and a great breakfast item. They are heart healthy and packed with vitamins, like Vitamin C, E, K, and B6. They are also great to eat during pregnancy, as they contain the good amount of fat needed for fetal development and also contain folate. Avocados are high in fiber so if your straining on the toilet, make sure to add them to your diet. Avocados are also rich in folate, which may you reduce the rate of depression. Also, how can you NOT be happy while cutting right into these babies when they are perfectly ripe. I usually buy a bunch of avocados and keep a take 1-2 out of the fridge so they all don’t rip up at the same time.

I find them creamy and delicious. There are so many ways to add avocados to your diet, such as guacamole or in smoothies for extra creaminess. I also love adding avocados in sandwiches and salads as well. Below is my go-to avocado toast recipe.

I love pairing the avocado toast with vegan mayo. I love the the Follow Your Heart Brand. My favorite chili lime seasoning is from Trader Joe’s but I also saw it sold at Shoprite and other stores as well. You can also add Tajin instead as well, if you prefer that.

Easy Avocado Toast

Equipment

Ingredients

  • 1 ripe avocado cut avocado in half to remove the pit. Then cut the avocado lengthwise.
  • 2 slices toasted whole wheat or multigrain bread
  • 1 tbsp vegan mayo
  • 1 tsp chili lime seasoning

Instructions

  • Spread vegan mayo onto the toasted bread.
  • Layer the sliced avocados on top of each slice.
  • Sprinkle on the chili lime seasoning evenly to each slice.
  • Say a prayer of gratitude and enjoy.
