Vegan Mexican Street Corn
I love street corn. It is so delicious, easy to make, and is a great side dish to any Mexican meal. This recipe is inspired by my sister, Ami and my brother in law Ajith. They are amazing chefs and they both love making Mexican food. I also learned how to make enchiladas from them as well. They also introduced me to queso fresco, which is kind of like paneer but just saltier. It is Mexican cheese and it taste great on street corn. The recipe I have posted here is vegan. But, if you like your dairy, I would suggest adding some crumbled queso fresco or Parmesan on top of this. Try it out and let me know what you think.
Vegan Mexican Street Corn
Sweet corn topped with a delicious, tangy, creamy chipotle vegan sauce
Servings: 2
Ingredients
- 1 tablespoon vegan mayo
- 1/3 teaspoon chipotle chili seasoning
- 1/4 teaspoon chili lime seasoning I use Trader Joe's chili lime seasoning. If you do not have this, use taco seasoning and 1/2 teaspoon of lime juice
- 1/2 teaspoon water
- 2 corn on the cob
Instructions
- Grill the corn on a stovetop or grill.
- Mix the rest of the ingredients together to create a sauce.
- Add this sauce to your corn.
- Serve with chopped cilantro or lime/lemon wedges. If you like it spicy add some crushed red pepper or cayenne pepper on top.
